Aloha and konnichiwa! My name is Shimon and I am the founder of Upright Tree Coffee Roasters, a micro-batch coffee roastery located in the beautiful city of Everett, Washington.

My journey began in Japan where I was born and raised, before moving to Hawaii where I spent my formative years. It was there that I developed a love for the rich and complex flavors of coffee, and the art of roasting.

After moving to Seattle in 2018, I worked in various tech companies, but my passion for coffee continued to flourish. In 2022, I made the decision to pursue my dream and obtained roasting certifications from the Specialty Coffee Association (SCA).

As I honed my skills and experimented with different roasting techniques, I realized that I wanted to share my love for coffee with others. And so, one thing led to the next, and I decided to open my own roastery in Everett, Washington.

With Upright Tree Coffee Roasters, I focus on micro-batch roasting to ensure the highest quality and freshest taste possible. I source only the finest beans from around the world, and roast them to perfection in small batches to bring out the unique flavors and aromas of each varietal.

My goal is to create a truly exceptional coffee that not only tastes amazing but also reflects my passion, dedication, and commitment to the craft. Whether you prefer a bold and full-bodied roast or a lighter and more delicate blend, I have something for everyone.

At our roastery, we use the state-of-the-art Aillio Bullet roaster, which is a fully electric roaster that rules out any fossil fuels, making it an environmentally friendly choice.

The Aillio Bullet is more than just an eco-friendly roaster, however. It is equipped with software that provides us with high precision and control over the roasting process. This allows us to roast consistently, ensuring that every batch of coffee we produce is of the highest quality.
